Rioja Navajas Joven Tinto
Produced in the Rioja Alta region in Spain, consisting of 95% of Tempranillo Grape and 5% of the Mazuelo Grape.
By closely following the annual growth cycle, the harvest date is always determined according to phenolic ripeness and maximum aroma - within the potential of each grape variety. Hand-picked between the last week of September and the first fortnight of October.
Grapes are de-stemmed and left in tanks for 48 hours of cold maceration, where after fermentation is precipitated by the grapes' own wild yeasts, at temperatures not exceeding 280C. The wine is then devatted and blended for the malolactic fermentation, which occurs naturally after a few months of resting. The wine is then clarified, filtered and bottled for it to round off.
Typical nuances of the Tempranillo and Mazuelo help to increase its acidity and its wild fruity aromas of red berries.
