15ml Campari
15ml Lime Juice
5ml Sugar Syrup
15ml Pineapple Juice

How to make the Sugar Syrup

If you need to make the sugar syrup. Bring to the boil 1 cup of water and 1 cup of syrup until the sugar has dissolved, then allow to cool.

How to make the Hummingbird cocktail

First add 50ml of Red Leg Spiced Rum, then 15ml of Campari, then 15ml of Lime Juice, then 5ml of sugar syrup and finally 15ml of pineapple juice into a high ball glass.

Add some cubed ice and shake with a shaker. Strain the cocktail into a rocks glass filled with ice cubes and then garnish with a mint sprig.
