La Clandestine

La Clandestine should be served in the classic Swiss way with one part absinthe to four to five parts iced water. Some people prefer not to add sugar.

It should never be flamed. As soon as you taste it, there is a wonderful richness of aromas, followed by a lingering light bitterness. You notice lively fennel, the herbiness of hyssop, anise, delicate mint, lemon balm and more. Then come subtle floral and fruit hints. There is no sense of the harshness or heavy liquorice, which is often found in many other absinthes.

A Fresh Lime
A Teaspoon of sugar or sugar syrup
40ml of La Clandestine Absinthe
Crushed Ice
Passion Fruit to Garnish
INSTRUCTIONS

Squeeze the fresh lime into a rocks glass
Pour in the sugar or sugar syrup
Muddle the ingredients so that the sugar cane is dissolved
Add 40ml of La Clandestine
Then fill the glass with crushed ice, garnish with passion fruit and serve.
